Ingredients
egg whitesbell pepperonion2% milk, shredded cheddar cheesespinachtomatosalsamushrooms, freshextra virgin olive oil
Directions
Add 1 tbsp of oil to skillet, sautee all vegetables, except tomatoes. Cook until unions are translucent. Set aside. Add remaining oil to skillet and pour in egg, over medium heat, let egg cook for about a minute or so. Add cheese, add cooked vegetables and close the sides of the egg to form omlette. Remove from heat, top with tomatoes and salsa. Spinach is optional, and should be added to omlette at time of adding cooked vegetables to the egg.
