Carrot and Coriander Soup

Ingredients

1 Onion1 lb Carrots2 tsp coriander1 1/2 pints of water2 stock cubes1 tbs veg oil
fry the oil, onions and carrots for 3 - 4 mins in a pan,
then add the coriander - Ground
fry for a further 1 minute in which time boil the water and make the stock.
then pour in the stock into the pan with the carrots then bring to the boil, once boiling then simmer until carrots are soft.
Then use hand blender and blend it together
