creamy carrot soup

1/4 c. margarine4 c. diced carrot1 c. chopped onion1 c. potato cubed1 tp. ground ginger6 c. water3 tp. chicken boullion1 c. milk 1%1 tp. dill seedsalt & pepper to taste
makes 6 - 2 c. servings
1. melt margarine in large skillet
2. add carrots, onion and ginger saute for until onions are slightly translucent. Transfer to 8 qt pot.
3. Add water, boullion and potatoes. Bring to a boil then reduce heat to simmer for 15 min.
4. remove liquid until veggies are still just covered. Puree with immersion blender.
5. add milk and dill, blend for another minute.
6. add salt & pepper to taste
7. serve hot.
