Scrambled Tofu

Ingredients
1 block extra-firm Tofu, drained and pressed to remove liquid, then crumbled1 C chopped onion1 C chopped red sweet pepper (or any color combo!)1/2 chopped celery1/2 C chopped mushrooms1 clove garlic, minced1/2 C Imagine Organic Vegetable Broth5 tsp Bragg Liquid Aminos (according to taste)1-2 tsp turmeric2 tbsp Red Star Nutritional Yeast

Yield: 5 protein packed servings

Drain tofu and wrap entire block in absorbant tea towel. Place heavy pan or book on top of wrapped tofu to squeeze out remaining water.

While the tofu drains, chop the veggies. Try to chop them uniformly to expedite saute time. Heat a heavy frying pan. I use cast iron because the heat is disbursed evenly and since this is a saute, you'll want to work quickly. Crumble the tofu and set aside while the pan heats.

Add half the veggie broth to the pan and then the onion, peppers, and celery. Saute until just tender. Then add the mushrooms, minced garlic, and crumbled tofu. Stir and add as much of the remaining broth as necessary to keep the tofu from sticking; add the Liquid Aminos, turmeric, and nutritional yeast. Continue to stir everything together. Once the liquid is absorbed you're finished! Serve immediately.

    i used olive oil instead of the veggie broth and it worked great that way too, im not a veggetarian so i added cheese on top, made the crumbles easier to manage with the fork. i also found that my husband liked it (and he can be picky) so try this on friends. - 9/22/07

    Add practically any veggie, the main difference from this breakfast a dinner fry is the tofu is crumbled, not cubed. You can add salsa (mix in, or serve on top) for a more Mexican variation. BTW, there are boxed "tofu scramble" mixes from Fantastic Foods -- these are OK, but salty. - 9/7/07
