Strawberry Rhubarb Crisp Gluten-Free

Ingredients
2 - 10 oz packages frozen rhubarb2-1/2 cups frozen sliced strawberries sweetened2 cups old-fashioned oatmeal2 tsp. cinnamon1 tsp. nutmeg4 Tbsp. margarine (I use Fleischmann's Original)1/2 cup light brown sugar
Directions
Defrost rhubarb and strawberries. This can be done in the microwave just before making, but if the fruit is warm, it may take less time to bake. Mix the fruit together thoroughly and place in the bottom of a glass baking dish (I use one about 7 x 9 inches). In a separate bowl mix oatmeal, cinnamon, nutmeg and brown sugar thoroughly. Cut in margarine. If there are some small lumps, it is fine. Spread the topping over the fruit. Bake for approximately 45 minutes to 1 hour until the fruit is bubbling and the top is crisp. Serve with milk or ice cream, if desired. Calories for those are not included.

    Never had rhubarb before but saw it at the local farmers market so grabbed a bunch. Wanted a gluten free recipe to try - this was very good. Cooked for 40 minutes at 375 degrees. Would probably add a bit more spices next time but otherwise would leave all else the same. - 5/7/17
