2 cups all purpose fflour1 tbs baking powder1/2 tsp salt1 1/2 cups mashed banana6 tbs butter2/3 cup sugar2 eggs1 tsp cinnamon1/2 tsp nutmeg1 tsp vanilla1 cup walnuts
In an another bowl, mix flour, baking powder, salt, cinnamon, and nutmeg;and place on the side. Place butter, sugar, eggs, banana, and vanilla into the bowl of a food processor. Process until smooth. Open the processor and scrape down sides, add nuts and (close the processor) pulse briefly. Open the processor again, scrape down and add the flour mixture (close the processor) and pulse until the flour just disappears. Pour mixture into a 12 muffin tin which has been sprayed with cookling spray and bake at 375oF for 20-30 minutes. Check at 20 minutes for doneness with toothpick.
