Mashed Potato Pancakes

Ingredients
2 cups mashed potatoes (approximately)1⁄4 cup flour1 to 2 eggssalt, pepper, and garlic, as desired
Directions
Mix flour and 1 egg into the mashed potatoes. Add another egg, if needed, making sure the mixture is not too thin. Add salt, pepper, and garlic as desired. Other ingredients such as onion, chives, or cheese can also be added to the batter, as desired.

Preheat skillet and add a little oil, butter, or bacon grease for frying. Spoon 2 to 3 tablespoons batter into hot pan; brown on both sides.

Enjoy with sour cream or applesauce.
