Grilled Eggplant Parmesan

Ingredients
1 eggplant cut in half2 tbsp olive oil1med green tomato, chopped1 can diced red tomatoes2 tsp minced garlic2 tbsp chopped onions (frozen works fine)6 slices fresh mozzarella4 tbsp parmesan
Directions
Preheat grill on low. Cut eggplant in half lengthwise. Coat each half with olive oil and lightly salt. Place on grill, cut side up, approx. 30 minutes until insides are done (soft). While eggplant grills, make a quick chunky tomato sauce by first sauteing garlic and onion in a little olive oil. Add green tomato and cook until tomatoes are soft. Add one can of diced tomatoes. Salt and pepper to taste. When eggplant and tomato sauce are done, put a little tomato sauce on each half of the eggplant. Top with cheese and more tomato sauce. Sprinkle parmesan on top. To eat: scoop and enjoy!

Eggplant may be cooked in the oven at 350 for 1/2 hour.
