Brie and Ham Quiche

Ingredients
1 9" (or 8" Deep Dish) pie crust (prebaked 8 minutes)1/2 c fat free mayo2/3 c milk3 eggs1 T Corn Starch6 oz Brie cheese (break into tiny pieces)1/2 c Lean Diced Ham1/3 c. Chopped Onion1/2 c Mushrooms1/4 of 10 oz. package frozen chopped spinach OR 1/2 c raw chopped spinach
Directions
Important Note: The trick to the perfect texture is to squeeze the excess liquid from the mushrooms and onions and the spinach if you use frozen. I place chopped mushrooms and onions inside a sandwich bag and microwave for 2 minutes, then put into a cheesecloth and just squeeze the liquid out.
Mix all ingredients, pour into pie shell, or, you may mix the mayo, milk, eggs and cornstarch, layer dry ingredients in crust then pour wet mixture over all for an elegant layered appearance. Bake at 325 degrees for 45 minutes or until firm. Let stand 5 minutes before serving. This recipe is easy to make your very own. Use whatever is your favorite cheese, vegetable, and meat. For vegetarian, use Morningstar sausage patties, crumbled. You'll be amazed how delicious this recipe is even when you use all “light” and “low-fat” ingredients.
