Low-Fat Cheddar Chowder

Ingredients

2 cups boiling water2 cups 1% milk2 cups diced potatoes1/2 cup chopped cauliflower1/2 cup diced celery1/4 cup chopped onions1/2 tsp salt1/4 tsp pepper1/4 cup low-calorie margarine1/4 cup all-purpose flour2 cups shredded low-fat cheddar1 cup cubed lean ham
Heat water in a large pot.
Add the potatoes, cauliflower, celery, onion, salt and pepper to boiling water.
Cover and cook over med-high heat for 10 minutes. Do not drain!
In a medium-sized sauce pan, melt margarine then add flour. Slowly add milk while whisking mixture.
Allow the sauce to thicken, then add to the veggie mixture.
Slowly stir in the cheddar until melted, add ham cubes and stir.
Do not bring soup back to boil.
You can serve immediately if you like, I like to transfer the soup to my slow cooker and leave it on low heat until ready to eat.

Simple, easy recipe, with every day ingredients. I actually used chopped, frozen onions, celery, & green peppers, along with potatoes, chopped bacon instead of ham, and the other ingredients. Very tasty! Wish I had some cauliflower available - would have been a nice touch. Love it though! - 8/18/10

Very very good! I just added on teaspoon of cornstarch to the margarine-flour-milk mixture to make it thicker and used broccoli. Turned out really nice! - 2/8/10

I have made this probably 10 times now! I love it!!! Each time I make it though I play around with it by adding more cauliflower, adding broccoli, omitting the potatoes, chopping things big, chopping things small...every time it tastes just a little bit different but always GREAT. - 7/21/11
