Kirsten's Tomato & Orzo Soup

Ingredients
1 tbsp. olive oil3 Cloves Garlic, diced2 tsp red pepper flakes1 796ml can of diced tomatoes, purred1 Roasted orange pepper, diced1 can tomato paste1/2 cup red wine900ml veg. broth1 tsp thyme1 tsp basil1 bay leafsalt and pepper to taste1 cup orzo
Directions
1. Heat oil in skillet. Add garlic and red pepper flakes. Cook until fragrant.

2. Add purred tomatoes and cook until rusty brown.

3. Add 1 can tomato paste, roasted pepper, red wine, vegetable broth, thyme, basil, bay leaf, salt and pepper

4. Simmer for 20 minutes

5. Take out bay leaf

6. Add orzo and cook until al dente.

Makes 6 1-cup servings
