Slowcooker Asian Peanut Butter Pork Tenderloins

1.5 to 2 lbs pork tenderloin1 onion, sliced in rings1/4 cup soy sauce [I use low-sodium]1/4 cup brown sugar3 tablespoons white wine vinegar3 tablespoons water2 garlic cloves, chopped1/2 cup creamy peanut butter [I use reduced fat]2 tablespoons chopped peanuts (garnish; optional, not included in nutritionals)1 lime, cut in wedges (garnish; optional)
(Use a 4-6 quart crockpot.)
- Spread onion slices on bottom of slowcooker.
- Place pork on top.
- Add brown sugar, soy sauce, vinegar, water, garlic, and peanut butter. No need to stir--the peanut butter needs to melt before you can do so.
- Cover and cook on low for 8 hours, or on high for 4-6.
- 1 hour before serving, flip the meat over in the crockpot to allow the other side to soak up the sauce. (This is where you mix the sauce, if necessary.)
Garnish with chopped peanuts, and serve with lime wedges. (The lime juice mixed with the peanut butter is delicious!)

This is extremely good! I'll be cooking this over and over. It was a big hit with everyone. I did add a couple of diagonal sliced carrots and a small peice of celery since I had them laying around. Also added a little heat with about 1/2 tsp Siracha sauce, to go with the Thai/asian peanut flavor. - 7/10/09
