Swedish Pancakes

Ingredients
1/2 c Spelt Flour1 c skim milk2 eggs1/4 c White Flour (optional)oil for frying (optional)
Directions
Mix first 3 ingredients and set aside for 20 minutes. Add white flour to obtain thin batter if needed. Put 1/2 cup of batter into the center of a nonstick skillet and rotate to get a round shape. Place cheese and ham before turning, if you want a meat filled pancake. Otherwise, fill with a little jelly, fruit, or yogurt.
