Smoosh's Tomato Vegetable Soup

Ingredients
1 cup chopped Onions, red4 tsp minced garlic1 can Del Monte (or other brand) crushed tomatoes1 can Del Monte (or other brand) diced tomatoes1 cup cauliflower1/2 cup red peppers (yellow or orange may be substituted)1/2 cup string beans1/2 cup zucchini1/2 cup yellow squash4 cups water or vegetable stockSugar or sweetener to taste2 tbsp olive oil (or canola)1/4 tbsp crushed red papper1/2 tbsp dry oregano1/2 tbsp dry basil
Directions
Heat deep, wide soup pan to medium heat. Add 2 tbsp. oil and heat until glossy. Add onions to pan and saute until lightly golden, but not brown. Add garlic and saute until translucent. Add crushed red pepper flakes, oregano and basil to pan. Add both cans of tomatoes and stir. Add sugar or sweetener to taste. Add vegetable stock or water and stir. Bring entire mixture to a boil. Reduce heat to low and add all vegatables. Simmer for one hour, stirring occasionally. Turn off heat and cool; if freezing, separate into one-cup portions. Larger portions may be refrigerated. Makes 8 one-cup servings.
