Crocpot Lentil Soup

Ingredients: * Lentils, 2 cup * Water, tap, 8 cup (8 fl oz) * Carrots, raw, 1 cup, chopped * Onions, raw, 1 cup, chopped * Garlic, 3 clove * Cured Ham, 2 cup * Vegetable Broth, 6 cup * Bay Leaf, 2 * Oregano, ground, 1 tsp

In a large pot combine water and lentils. Bring to a boil and boil for 3 minutes.
Remove lentils from heat and let stand for 1 hour
Combine onion, garlic, carrot in a pan with olive oil and sautee until softened. Add the oregano and stir. Add to slow cooker.
Chop the ham into cubes and add to slow cooker,
Drain and rinse the lentils and add to slow cooker, along with broth and bay leaves.
Cook in the slow cooker on high for 4-5 hours or low for 8-10 hours.
