My Ma's Lemon Basil Pesto

Directions
Make sure the basil is both well-washed and well dried (sopping wet basil can add excess liquid).
Plop first 4 ingredients into the food processor. Pulse until well-blended.
Drizzle in the Olive Oil and Lemon Juice. Pulse and mix just until thoroughly blended.
As with any recipe, you may want to add salt (to taste)
A little can go a loooong way! Mixed with some diced tomatoes and tossed with Shiratake Noodles, dabbed onto a sandwich or spread over some chicken (and baked), this adds a lot of flavor for a small caloric investment.
Yields approximately 10 1oz (28g) servings.

* 3 cups of Basil (appr. 70-100 g)*.5 cup grated Hard, Aged Parmesan Cheese (appr. 35g)*.5 cup Pine Nuts (60g)* 6-10 Garlic Cloves, depending on size (30g)* .25 cup EACH Lemon Juice & Olive Oil
