tomato and bread salad

Ingredients
1 clove garlic2 pounds ripe tomatoes1 med red onion, thinly sliced5 Tbs olive oil3 Tbs balsamic vinegarMrs. Dash5 one inch thick rustic bread slicesone large cucumber1 cup fresh basil leaves
Directions
1. Toast bread on both sides under broiler. Rub with garlic clove, (save garlic clove for dressing). Sprinkle with Mrs. Dash and cut into 1 inch cubes.

2. Cut tomatoes, and cucumber into chunks, slice red onion. Place in bowl. Mix the oil and vinegar, add salt and pepper to taste and pour over tomato mixture. Let stand on counter for about an hour.

3. When ready to serve toss bread with tomato mixture and toss to coat. Season as necessary with salt and pepper. Stack and roll basil leaves like cigar and slice into thin shreds. Add to salad.
