1 Zucchini, cut in half lengthwise, then sliced thin2 Tbs Milk2 Tbs Italian Breadcrumbs7 large eggs2 Tbs water3 Tbs Parmesan grated parmesan cheese1 Tbs butter
Blanche sliced zucchini for five minutes. Drain.
Mix milk and breadcrumbs, add to zuchhini and mix to coat.
Whip the eggs with water.
Heat Omelette pan, add butter and swirl melted butter to coat pan bottom. Add eggs. When bottom is firm, add zucchini evenly, then sprinkle with the parmesan cheese. Broil until top is cooked and puffed and cheese begins to brown. Slice into 4 quarters and serve, pie style.
