chicken in soy flour

Ingredients
Soy FlourParmesan Cheese - Shredded1 package Chicken Breast TendersEgg Subsititute - egg washFF Milk - egg washCanola Oil - for cooking only
Directions
1.mix soy flour and parmesan cheese in a large bowl; add a pinch of salt for flavor
2.in separate bowl add egg beaters and milk (egg wash, so approximately 2 cups total for 1 lb chicken)
3. take chicken tenders and place in egg wash
4. take large skillet and add enough canola oil to come up less than half way in the pan (approximately 1 to 2 cups depending on the size and depth of skillet); medium heat
5. remove chicken from egg wash and place in soy flour mixture; coat well
6. place chicken in skillet
7. use tongs to flip chicken every 5-7 minutes until cooked throughly; chicken (soy flour) will be medium brown
8. place on paper towel to soak excess oil (minimal)
