FRUIT AND CHEESE STUFFED FRENCH TOAST

2 tbsp light cream cheese, softened4 slices reduced calorie whole wheat bread 2 tbsp strawberry or favourite kind of jam1 large egg2 egg whites3 tbps 2% milk1 tsp vanilla extract1/2 tsp cinnamonpinch nutmeg (optional)
Spread cream cheese evenly on 2 slices of bread, leaving a 1/8 inch border
spread the jam on the remaining slices of bread, leaving a 1/8 inch border
cut each sandwich in half on the diagonal. Set aside
Beat egg and egg whites in a large shallow bowl or pie plate.
Whisk in mil, vanilla, cinnamon, and nutmeg (if using).
add 2 sandwich halves to egg mixutre. let stand until evenly soaked, about 20 seconds on each side.
Repeat with the remaining 2 sandwich halves.
Spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the sandwiches to the skillet and cook until browned, 2-3 minutes on each side.
