2 1/4 c sugar2 c flour1 1/3 c cake flour2 tsp baking soda2 tsp ground cinnamon1 tsp salt1 tsp baking powder3/4 tsp ground cloves1/2 tsp ground nutmeg4 eggs1 can (15 oz) solid-pack pumpkin1 c buttermilk1/2 c unsweetened applesauce1/3 c canola oil
In a large bowl, combine the first nine ingredients. In another bowl, whisk the eggs, pumpkin, applesauce and oil. Stir into dry ingredients just until moistened. Transfer to two 9 in. x 5 in. loaf pans lightly coated with cooking spray. Bake at 350 for 45-55 minutes or until golden brown and a toothpick inserted in the center comes out with moist crumbs. Cool for 10 minutes before removing from pans to wire racks.
Yield 2 loaves (16 servings each)

Made the recipe exactly as written. Was delicious, especially served warmed. Even slices microwaved the following day (just a few seconds)! Was great by itself but also ate it with small amount of lemon curb spread on the slice and also tried with Tbsp Philadelphia whipped cream cheese. Both tasty! - 1/7/15
