California Poached Egg on Toast

Ingredients
1 slice Whole wheat bread 1 Eggland's Best Large Egg 2 slices Tomato1/4 Avocado, skin, seed removedSalt and Pepper (to taste)
Directions
1. Bring pot of water to a boil and then turn down to a simmer. (Adding a dash of vinegar to water will help egg stay together). 2. Carefully crack egg into simmering water. Remove egg with a slotted spoon after 3 minutes.
3. Toast bread and top with tomatoes. Place the poached egg on top of the tomatoes and garnish with avocado slices.
