Ingredients
4 Large Eggland's Best eggs2 slices (nitrate free) bacon diced1 small scallion sliced thinly (green included)1 clove garlic minced1/4 cup diced sweet red pepper6 medium (crimini) mushrooms slicedpepper to taste1 oz cheddar cheese shredded2 slices Pepperidge Farm Darm German Wheat bread
Directions
Crisp diced bacon in a skillet, remove and set aside bacon bits but reserve the fat. Saute sliced scallion, mushrooms, red peppers, and garlic until veggies tender. Toast bread and tear bite sized pieces into two bowls. Put reserved bacon bits back into veggie mix, divide and spoon it over the toast. Carefully crack the 4 large Eggland's Best eggs into the pan and cook them over easy.. Place two eggs on top of the veggies and toast in each bowl, sprinkle each with half the shredded cheddar. After serving break the yolks and whites up, mix it together and enjoy. Makes 2 servings.
