tofu and greens

Ingredients
1 bunch spinach, chopped and washed3 cups amaranth leaves, chopped and washed1/4 block of tofu1/8 cup of soaked mung beans1 tsp. oil1 tsp. cumin3/4 tsp. salt1/4 tsp. hing
Directions
Put oil in a non-stick pot on medium heat. Saute cumin, hing and mung beans for a minute. Then add greens, tofu and salt. Mix well and cover with lid. allow to cook for about 5 minutes. Remove lid and cook for a minute or so more on high heat to cook off any excess liquid. Serve hot. Makes 2 servings.
