Fit Sweet/sour Red Cabbage

10 cups shredded red cabbage3 T butter1/2 c. thinly sliced white onion3 T honey3 T lemon juice1/2 tsp. sea saltpepper to taste
Shred cabbage and soak in cold water for 10 minutes. Heat butter in heavy pan. Add onion and saute til soft. Lift cabbage out of water, though retaining some water and transfer to onion butter mixture. Cover and simmer 10 min. Mix together honey, lemon juice and salt. Pour over cabbage and mix well.
Cover and simmer over very low heat for an hour. Add water if necessary. If too liquidy uncover til water is absorbed.
Serves 4-8.
