Slow Cooked Bone in Chicken Breast

Ingredients
1 cup frozen spinach, thawed and excess water removed (measure AFTER thawing!)1 cup peppers chopped (any color)1 cup fresh mushrooms, chopped 2 tsp minced garlic1 chicken breast (bone in with skin)1/2 tsp sea salt1/2 tsp black pepper1/4 cup onion, chopped3 cups of waterThe juice of one lemon
Directions
Put chicken breast in the crockpot and add veggies around it, sprinkle garlic, salt, pepper and onions over it all. Add in water and lemon juice and give a small stir to combine.

Cook in crockpot for 6hr (med-high)

    I followed everything it says to do. I'm not sure if there's a typo or what, but I don't think it was right. Ended up straining off the water, because it was, well, flavorless water. I'm sure something could be done to make this better, I'm just not cooking savvy enough to know what. - 2/16/11
