Salmon Croquettes

Ingredients
1 large can of Red Salmon1egg1 T butter1 lemon, sliced1 T lemon juice2 T chopped parsley1/2 med onion, chopped3 C Vegetable oil1/2 package of saltines, crushed1/2 C milk2 T flour
Directions
Saute onion with butter on med heat for approximately 5 min. until tender. On low heat add milk and flour, slowly, while whisking for 1 min to make the white sauce. The mixture should be a little thick. Take off burner. De-bone and skin the salmon and put in small bowl. Add parsley and lemon juice, mix. Add the white sauce mixture to salmon, mix. Make small oval patties and dip in egg mixture. Next roll the patties in the crushed cracker crumbs. ( I like to use a ziplock bag for this). Heat oil to med high heat in saute pan. Add the croquettes and fry for 5 min, until they are a golden brown. Makes 8-9 patties. When finished serve with sliced lemon and enjoy!

    The calories and the carbs need to be adjusted. One place it says 8 servings and another place it says # of servings 1. Sounds goods. I will be making when I get to the store to get the salmon. Will make some coleslaw to go with them. Keep the receipes coming. - 10/4/13
