Introduction

Number of Servings: 4

Ingredients

    2 fillets of alaskan cod, halved
    2 carrots, peeled and cut into strips
    1 cup snap peas
    1 lemon, quartered
    4tsp olive oil
    2 tbsp cumin seed, ground
    2 tbsp oregano, ground or fresh
    salt and pepper to taste
    parchment paper

Directions

preheat oven to 400 degrees.
cut parchment paper - 4 sheets of 15 x 15 in. squares. fold in half, then unfold.
divide carrots and peas evenly among the 4 squares. lightly season with cumin and oregano, salt and pepper.
top with cod fillets. squeeze 1 lemon quarter over cod, drizzle each with a tsp of olive oil. season with remainder of cumin, oregano, salt and pepper.
fold over parchment. starting in one corner, fold in small triangle all the way around the packet, leaving no opening (make sure to leave some slack for steam to puff up packet. repeat with remaining packets.
place packets on baking sheet, bake for 15 minutes. transfer packets to plates. Serve with a knife to slit, being careful of escaping steam.

    This turned out very well. Will make again! I made a few minor adjustments:

    - baked in foil packets instead of parchment paper
    - added broccoli slaw on top of the carrots & snap peas
    - added a lemon slice on each fillet before seasoning
    - 15 minutes wasn't enough; baked for 25 minutes
