Potato Broccoli Soup

Ingredients
12 ounces potato, peeled and cubed4 teaspoons margarine1 cup onion, chopped2 1/2 cups boiling water (unless using bouillon)1 tetra pack chicken broth (900mL) OR 2 chicken bouillon cubes1 cup steamed broccoli florets
Directions
In medium saucepan, melt margarine. Add onions and saute 5 minutes. Add potatoes, water and bouillon. Cover and cook until potatoes are just tender. Remove 1 cup of potato with slotted spoon, set aside. Pour remaining contents into blender, process until smooth. Return to saucepan, mix reserved potatoes and broccoli.
