1 TBS olive oil1/4 c. diced onion1/3 c. diced yellow or green bell pepper100 g (1 to 1.5 c.) fresh mushrooms, finely diced1/2 c. ketcup1 - 2 tsp prepared yellow mustard1/4 to 1/3 c. water2 TBS chili powder1 tsp garlic powder1 TBS cider vinegar (or any vinegar)2 TBS (not packed) brown sugarsalt & pepper to taste
Makes 4 servings
1. Thaw and crumble the veggie burger and set aside.
2. Toss the diced vegetables together with the olive oil. Sautee in a medium to large skillet over medium to medium high heat until the onions begin to turn translucent.
4. Add the crumbled veggie burger and sautee 3 more minutes.
5. Add all remaining ingredients. Reduce heat to low/simmer, cover with a lid. Simmer 5-10 minutes or more. Serve on your favorite bun.
