Lentil Salad w/Fresh Mint & Parmesan Cheese (Weight Watchers)

Ingredients
* Lentils, 1 cup dry * Onions, raw, .25 cup, chopped * Fresh Mint, 3 tbsp * Salt, .25 tsp * Pepper, black, .25 tbsp * Parmesan Cheese, grated, .25 cup
Directions
Place lentils in a medium saucepan and pour over enough water to cover lentils by 2-3 inches. Add Bay Leaf and set pan over high heat; bring to a boil. Reduce heat to medium and partially cover pan; simmer until lentils are tender, 15-20 minutes. Drain lentils; discard bay leaf and transfer lentils into a large bowl.

While lentils are still warm, stir in red onion and mint; season to taste with salt and pepper. Sprinkle cheese over salad just before serving; serve warm or chilled.
