Vegan Fajitas

Ingredients
1 medium green bell pepper, sliced1 medium red bell pepper, sliced1 cup mushrooms, sliced1/2 c onions, sliced4 medium-sized tortillas2 tablespoons fresh cilantro
Directions
In a large skillet, saute onions. When onions are almost tender, add red and green bell peppers and saute until tender. Add the mushrooms and cook 2-3 minutes longer. Meanwhile, warm the tortillas.

To assemble, place 1/4 of the vegetable mixture on each tortilla and garnish with 1/2 tablespoon fresh cilantro.
