Lettuce Wraps (Ground Chicken)

1 teaspoon Sesame Oil1 Tablespoon Canola Oil - Not Olive Oli3 cloves Garlic, Minced2 Tablespoon Fresh Ginger, Minced2 whole Carrots, Diced1 red bell pepper2 stalks Celery, Diced2 whole Shallots, or 1/2 cup Minced Onion1 pound Ground Chicken3/4 can Water Chestnuts, Diced1 bunch Green Onions, diced2 Tablespoons Hoisin Sauce2 pinches red pepper flakes2 Tablespoon Roasted Garlic Teriyaki sauce4 Tablespoons Soy Sauce2 teaspoon Oyster Sauce1 Tablespoon Sriracha, or cooking wine1 teaspoon Brown Sugar1 head Crunchy Lettuce Or Romaine Lettuce
In a large pan or wok heat oil over medium high heat. Add ginger and garlic. Be careful not to burn. Stir-fry until fragrant. Add the carrots, celery and onions or shallots. Cook for about 5-8 minutes or until tender. Meanwhile, mix all of the sauces together in a bowl including the sugar. Stir well.
Add the chicken. Once it is cooked, Stir in all the vegetables except the water chestnuts and green onions.
Mix together sauces and sugar and then pour into your chicken/vegetable mixture. Continue stirring so all the flavors combine. Toss in chestnuts and green onions.
Serve in lettuce cups
