Ingredients
.5 cup Bulgar Wheat1/3 cup fresh lemon juice (2-3 lemons)2 cups chopped parsley2 tbs. chopped mint2 finely diced garlic cloves2 medium tomatoes, finely diced, seeds, pulp removed1/3 cup olive oil
Directions
Rinse bulgar wheat in warm water. Drain. Add half the lemon juice and let sit 20-40 minutes until wheat is fluffy and not too crunchy.

Combine prepared bulgar and remaining ingredients in a bowl. Mix well. Cover and refrigerate at least an hour to let flavors meld.
