Banana Chocolate Chips Mini Muffins (2 muffins)

Ingredients
1 cup Sugar1 large Egg1/2 cup Butter (unsalted)1-1/2 cups Banana, mashed 2 cups Whole Wheat Flour2 tsp Baking Soda1/2 tsp Nutmeg1 tsp Cinnamon1/2 tsp Vanilla Extract1-1/2 cups Semi-Sweet Chocolate Chips
Directions
Combine first 4 ingredients together. Sift together flour, baking soda, nutmeg, and cinnamon, then add to banana mixture. Add vanilla and chocolate chips and blend well. Scoop into mini-muffin pans (about 1 Tbsp each muffin) or onto cookie sheet and bake in 350* oven for 10-12 minutes. Lightly grease pans or use paper liners, if desired.

Makes 36 servings, 2 muffins each serving.
