Apple Bread

2 Gala Apples, peeled and diced1/2 cup brown sugar1/4 cup white sugar1 cup unsweetened applesauce2 eggs, lightly beaten1 tbsp vanilla extract1 1/2 cup flour1/2 tsp salt1/2 tsp baking powder1/2 tsp baking soda1 tsp apple pie spice1 tsp cinnamon
1. Preheat oven to 400 degrees F.
2. Whisk together eggs, vanilla, sugars, and applesauce. Add dry ingredients and mix with spatula until just encorporated.
3. Fold in apples and mix until just mixed. Pour batter into greased rectangular bread pan.
4. Bake for 45 minutes, or until toothpick or cake tester inserted into center comes out clean. Allow to cool in pan for 20-30 minutes before removing. Slice into 10-12 slices.
Will keep up to 1 week in an airtight container.
