- Mango Pico de Gallo, 2 tbsp (Like Maria Luna Original Brand)- Cucumber (peeled), 1 cup, pared, chopped -Red Ripe Tomatoes, .25 cup, chopped or sliced (equivalent to 1 small tomato)- Scallions, raw, 2 small (3" long) - Onions (red or white), raw, .5 cup, chopped Avocados, California (Haas), 70 grams (equivalent to 1 very small avocado which equals about 1/2 cup) - Lime Juice, 2 lime yields - Salt and seasoning to taste (I used Light salt to reduce sodium content)
Chop all ingredients & mix together in a small bowl. Tasted a lot better when chilled.
