8 cups thick Rolled oats2 cup chopped nuts (pecans and walnuts are nice)2 cup raw sunflower seeds1 cup sesame seeds1 cup unsweetened coconut1/2 tsp salt1/2 cup maple syrup1/2 cup olive oil2 cups dried chopped fruit (dates, cherries, raisins, figs)
Mix oats, nuts, sunflower and sesame seeds, coconut and salt in a large bowl. Warm the maple syrup and oil in small saucepan. Add to dry oat mixture and toss to coat. Spread on 2-3 large baking sheets, about 1/2 inch thick (if too thick, it will not crisp properly). Roast for 30-40 minutes, stirring once or twice and rotating sheets, until golden. Cool, then add chopped dried fruit. Store in jars or plastic bags. Freeze for longer term.
Makes 4 gallons, or 192 one-third cup servings.
