Pasta e Fagioli

Ingredients
1 pound ground beef, lean1 C diced onion1C diced carrot1C diced celery2 cloves garlic, minced2 14.5oz cans diced tomatoes w/liquid1 15oz can red kidney beans w/ liquid1 15oz can great northern beans w/ liquid1 12oz can V81 TBSP white vinegar1.5 tsp salt1 tsp oregano1 tsp basil.5 tsp pepper.5 tsp thyme1/2 pound ditali pasta
Directions
Brown ground beef in large soup pot. Drain the grease and add the garlic, onion, carrots and celery. Saute about 10 minutes. Add all else except the pasta. Simmer 1 hour.

About 50 minutes into the simmer time, cook the pasta. Drain and add to the soup. Let set 10 minutes then serve.
