2 C Orzo pasta1/4 c green peppers, chopped1/4 c red peppers, chopped1/2 c broccoli, chopped1/4 c onions, chopped3 cloves garlic, minced2 TB Italian Seasoningsalt and pepper to taste1/3 C Parmesan cheese1 TB butter1 TB extra virgin olive oil
1. Dice vegetables. Cook Orzo according to package directions in medium saucepot. Set aside.
2. In same pot, add butter, olive oil, and seasonings. When warm, add vegetables. Cook until just tender (about 3-5 minutes)
3. Add orzo back to pot. Stir. Add Parmesan cheese and blend until creamy.
