Muffin mix:1 1/2 Cups almond flour1/4 tsp sea salt1/2 tsp baking soda1 tsp ground cinnamon1/2 tsp ground nutmeg1/4 tsp ground ginger1/8 tsp ground cloves2 Tbsp Butter or coconut oil1/2 Cup Truvia or stevia3 large eggs1 cup canned or fresh mashed pumpkinFrosting:4 ounces cream cheese2 Tbsp unsweetened almond milk3 Tbsp Truvia or a touch of stevia glycerite.
IN a mixing bowl combine almond flour, baking soda, salt and spices. In a separate bowl mix coconut oil, sweetener, eggs and pumpkin until smooth. stir in dry ingredients to mix. grease or place paper liners in muffin tins. Spoon batter in each - 1/2 - 3/4 full. Bake at 325 F for 30 - 40 min. Cool and top with cream cheese frosting.
Frosting:
Put cream cheese, almond milk and sweetener in a mixing bowl. Beat together until smooth. put a large dollop on top of each muffin.
