Meatless Ham and Split Pea Soup

1 TBS extra virgin olive oilsalt2 medium onions, chopped medium2 medium carrots, chopped medium2 medium celery ribs, chopped medium1/2 TBS butter2 cloves garlic, minced or pressed in garlic presspinch sugar1 pound split peas, rinsed and picked over2 quarts hot water2 TBS Ham flavored Better than Boullion2 bay leaves1 tsp dried thyme3 small new potatoes, scrubbed and cut into medium dice
Heat olive oil in a dutch oven over medium heat. Add onions, carrots, celery and 1/4 tsp salt. Cook covered for 10 minutes, stirring occaisionally. Add butter, garlic and sugar, and cook for 5 more minutes. Add peas, boullion, water, bay leaves, thyme, and potatoes. Bring to a boil, then turn dowb to a simmer. Cook until peas are tender, about 35 minutes. Season with salt and pepper as desired.
