9 fresh eggs, beaten1/2 c chopped fresh spinach1/3 c skimmed milk1/3 c spelt flour1/4 c 2% grated cheese1 tbsp chopped fresh basil1 tomato chopped1/2 tsp seal salt1/2 tsp pepper
Spray 12 muffin tins with non-stick cooking spray and preheat the oven to 350. Mix all ingredients together and divide between muffins tins. Bake for 25 min, test doneness with fork. Let set for 5-10 min, enjoy!
