Healthy Pumpkin Spice Oatmeal snack balls

Ingredients
2 tsp Cinnamon1 tsp cloves1 tsp ginger1 Tbs vanilla extract3 cups old fashioned oats1 1/4 cup whole wheat flour1 cup brown sugar1 cup splenda1 cup pumpkin1 tsp baking soda3 cups shredded coconut1/3 cup chopped pecans
Directions
Makes about 48 balls.
Cream pumpkin, spices and sugar. Add oats, flour, baking soda, pecans and coconut. Mix well.
Form 1 Tablespoon-sized balls and place on a greased baking pan. Bake for 12-15 minutes on 350*.

    I don't like cloves so I'd leave that spice out but these sound like something I'd like to try. I just printed out the recipe so I can remember to buy some ingredients I don't have and make these. - 10/27/10
