Poulenta Muffins (Cornmeal)

Ingredients
2 cups yellow cornmeal2 tsp baking powder1 tsp salt1 tbsp margarine1 cup skim or 1% milk2 medium eggs1 packet sugar free sweetener
Directions
Preheat oven to 425. Bring 2 cups of water to boil. While water is heating, mix corn meal, baking powder and salt in bowl. Add boiling water. Add margarine. Stir. Add egg and milk. Stir until lump free. Pour into muffin tins and bake until golden and firm to the touch, about 25 minutes (depends on your oven). Makes 12.

These are good hot with margarine, or cold with marinara sauce. Also good with drizzled cheeze or brown sugar, depending on taste. These are not cake muffins. For a fluffier muffin, substitue 1 cup whole grain flour for 1 cup cornmeal.
