Creamy Goat Cheese Polenta

4 cups water1 cup dry polenta cornmeal1 tsp. salt4 oz. soft goat cheese
Bring 4 cups water to a boil.
Add polenta to the water, whisking constantly to avoid lumps.
Reduce heat and simmer polenta for 10 minutes, adding extra tablespoons of water if needed.
When polenta is done, crumble goat cheese and stir in. Check seasonings, and add salt to taste.
Makes 4 servings approx. 1 cup each.
