Mushroom Chevre Quiche

Ingredients
3/4 cup egg beaters1 egg1 cup milk1/2 tsp. each dried basil and oregano3 oz chevre, crumbled3/4 cup sauteed mushrooms6 sundried tomatoes, sliced thinly1 pie crust, frozen
Directions
Beat the eggs with the egg substitute. Whisk in the milk and dried herbs.

Arrange the mushrooms, chevre, and tomatoes evenly in the pie crust. Pour the egg mixture over this.

Bake at 350* F for 30 minutes or until just barely firm and slightly puffy.
