* Filling:
Peel, core and slice the apples.
* Melt 20 gm butter in a frying pan and cook the apples to just soften them. Combine in a bowl with remaining filling ingredients and mix gently to ensure the apples don't break up.
* Philo pastry:
Lay out a sheet and brush lightly all over with melted butter. Lay another sheet over and again brush with butter.
* Repeat using 6 more sheets.
* Place the filling down the center, leaving 5cm at each end. Roll up and seal ends, making sure the join is on the bottom, place on a greased baking tray and brush all over with butter.
* Bake 170C/360F for 30 minutes until golden in colour.
