Recipe: Taco Salad for two

Ingredients
1/2 cup salsa2 tbsp reduced fat sour cream1/2 tsp avocado oil1 small onion chopped2 cloves garlic mined8 oz lean ground beef1 large plum tomato diced1/2 cup kidney beans1 tsp ground cumin1 tsp chili powder salt to taste4 cups romaine lettuce1/4 cup shredded reduced fat mexican cheese blend
Directions
combine salsa and sour cream
heat oil in skillet over med heat. add beef and cook until cooked through
add tomoato, beans, cumin, chili powder and salt, stir until the tomato breaks town (2 min). remove from heat, stir in 2 tablespoons of the salsa/sour cream mixture
add lettuce to the remaining salsa mixture and toss to coat.
split lettuce onto 2 plates, top with meat and sprinkle with cheese
enjoy!

    This was great! Definitely need to use Romaine or iceberg lettuce, I used mixed greens and they got soggy quick! But, everything still tasted great! - 8/24/07
