Steamed Pork with Cabbage

1lb lean ground pork3 cups cabbage, chopped finely2 tablespoons fresh ginger, chopped finely2 eggs, lightly beaten1 Tablespoon fish sauce~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~8 cups cooked brown rice
Combine all ingredients except rice with a spatula and a gentle, folding motion until incorporated. Do NOT use your hands or any tool that might compress the mixture. Scoop evenly into two oiled, tempered glass pie plates (do not press down, just scoop) and steam each in a covered wok or other pot with a steamer rack for 10 minutes. Makes 8 wedge-shaped portions. Serve over a cup of brown rice.
